Blueberry Pancakes Sunday

Light, fluffy and fruity the Ultimate Sunday morning breakfast.  These easy blueberry pancakes are made with fresh blueberries. Pancakes freeze really well so we can make a huge batch and eat them for breakfast all week.  

Ingredients:
• 1 to 1  1/2  cup milk • 2 large eggs • vanilla extract (optional) • 1/4 cup sugar
• 3 tablespoons melted butter • 1 1/2 cups flour  • 1 1/2 teaspoon baking soda 

Instructions:
Heat griddle over medium heat

In a bowl combine flour, baking soda, sugar and mix 

In another bowl mix milk, eggs, butter and vanilla extract 

Add the dry ingredients (flour, baking soda, sugar) to the wet ingredients (milk, butter eggs and vanilla extract) and mix all together

Gently fold in the blueberries to the mixture 

Lightly butter the hot griddle 

With an icecream scoop, scoop some of your blueberry batter and pour over your griddle.

Let cook for about three minutes or until bubbles start to form at the top. Flip over your pancake and cook until golden brown. 

Continue with the rest of the batter

Enjoy with a glass of milk, orange juice or a cup of coffee
